Craving a Roast but don’t have the time (or mental capacity today) to pull out all the stops? Here’s my cheat sheet to a super speedy and comforting Sunday Roast.
Serves 2
481 Calories – 39g Protein, 49g Carbs, 16g Fat
Ingredients
- 250 g Roast chicken (buy a whole chicken roast chicken and you have leftovers for lunch)
- 1 TBSP Butter
- A little Low fat milk
- 2 Mixed vegetable steambags (or just frozen vegetables)
- Beef gravy granules
- 500 g Irish rooster potatoes
Method
- To save time, buy a cooked roast chicken (e.g. Tesco, Dunnes Stores, SuperValu), OR buy a raw whole chicken and cook as per instructions.
- Peel and chop potatoes, add to a pot of water, and boil for 20-30 minutes. (NOTE: feel free to keep the skin on for extra fibre! Just make sure to wash the outside of the potatoes if so).
- 10 minutes before potatoes are cooked: add two steambags of veggies to the microwave, OR boil frozen veg in a pot.
- Make up a jug of gravy, as per instruction on packaging.
- Once soft, drain the potatoes, then mash with butter and some milk until you get your desired consistency.
- Serve your mashed potatoes, chicken, veggies, and gravy, and enjoy!
