481 Calories – 39g Protein, 49g Carbs, 16g Fat

Ingredients

  • 250 g Roast chicken (buy a whole chicken roast chicken and you have leftovers for lunch)
  • 1 TBSP Butter
  • A little Low fat milk
  • 2 Mixed vegetable steambags (or just frozen vegetables)
  • Beef gravy granules
  • 500 g Irish rooster potatoes

Method

  1. To save time, buy a cooked roast chicken (e.g. Tesco, Dunnes Stores, SuperValu), OR buy a raw whole chicken and cook as per instructions.
  2. Peel and chop potatoes, add to a pot of water, and boil for 20-30 minutes. (NOTE: feel free to keep the skin on for extra fibre! Just make sure to wash the outside of the potatoes if so).
  3. 10 minutes before potatoes are cooked: add two steambags of veggies to the microwave, OR boil frozen veg in a pot.
  4. Make up a jug of gravy, as per instruction on packaging.
  5. Once soft, drain the potatoes, then mash with butter and some milk until you get your desired consistency.
  6. Serve your mashed potatoes, chicken, veggies, and gravy, and enjoy!
