Banana Buckwheat Pancakes
Pancake Tuesday (or any day!) calls for a delicious, nourishing stack of pancakes, and these banana buckwheat pancakes tick all the boxes.
Naturally gluten-free, high in fibre, and packed with gut-friendly goodness, they’re a perfect way to enjoy a treat while supporting your digestion.
Buckwheat is a nutrient-rich whole grain, offering plant-based protein and essential minerals like magnesium, while bananas add natural sweetness and prebiotics to help feed beneficial gut bacteria. Topped with antioxidant-rich berries and probiotic yoghurt, this stack is as good for your gut as it is for your taste buds!
Ingredients
- ½ banana
- 1 egg
- 20g buckwheat
- 30g oats
- ½ tsp baking powder
- 80 ml kefir (or milk of choice)
- 2 handful berries (fresh or frozen)
- Extra virgin olive oil for cooking
- Toppings of choice (e.g. berries, nuts, seeds, yoghurt
Instructions
- Combine the banana, egg, buckwheat, oats, baking powder, and kefir or milk. Blend until smooth, then add 1 handful of mixed berries.
- Heat a small pan with extra virgin olive oil. Pour in 1/4 of the batter and cook until golden/brown. Flip and cook the other side. Repeat this for all 4 pancakes.
- Heat 1 handful of berries by adding them to the pan with 2 tbsp of water OR by microwaving. Once melted, mash with a fork until smooth.
- Stack the pancakes. Pour the melted fruit mixture on top. Serve with live yoghurt, seeds and crushed nuts (or toppings of choice!). Enjoy!
