White Chocolate Pistachio Pancakes

Ingredients
- 1 green banana,
- 1 egg
- 60g Greek yoghurt
- 50g oats
- ½ tsp baking powder
- ½ tsp vanilla extract
- 15g white chocolate chips (plus extra for topping)
- 10g pistachios, chopped (plus extra for topping)
- 2g extra virgin olive oil (for cooking)
Instructions
- Mash the banana in a bowl until smooth.
- Whisk in the egg, Greek yoghurt, and vanilla extract.
- Stir in the oats, baking powder, and a pinch of salt.
- Fold in the white chocolate chips and chopped pistachios.
- Heat a pan over medium heat and lightly grease with olive oil.
- Spoon the batter into the pan, forming small pancakes. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 1-2 minutes until golden brown.
- Serve warm with live yoghurt, a drizzle of honey, and more pistachios and white chocolate chips on top.
