White Chocolate Pistachio Pancakes

These gut-friendly, banana pancakes are sweet, packed with prebiotic fibre, and have the perfect balance of creamy white chocolate and crunchy pistachios. A delicious and nourishing way to kick off your day with a fulfilling breakfast or brunch!

Ingredients

  • 1 green banana,
  • 1 egg
  • 60g Greek yoghurt
  • 50g oats
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • 15g white chocolate chips (plus extra for topping)
  • 10g pistachios, chopped (plus extra for topping)
  • 2g extra virgin olive oil (for cooking)

Instructions

  1. Mash the banana in a bowl until smooth.
  2. Whisk in the egg, Greek yoghurt, and vanilla extract.
  3. Stir in the oats, baking powder, and a pinch of salt.
  4. Fold in the white chocolate chips and chopped pistachios.
  5. Heat a pan over medium heat and lightly grease with olive oil.
  6. Spoon the batter into the pan, forming small pancakes. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 1-2 minutes until golden brown.
  7. Serve warm with live yoghurt, a drizzle of honey, and more pistachios and white chocolate chips on top.
