- 1 chicory, leaves separated
- 4 tbsp red lentils
- 2 gloves garlic, crushed or finely chopped
- Leaves from 1 stick of thyme
- Mixed herbs
- Turmeric
- Black pepper
- Salt (optional)
- 2 stock cubes or 1 L vegetable stock or broth of choice
Instructions
- Crush or finely chop the garlic. Rinse the lentils, and wash and chop all vegetables – keeping the skins on for added nutrients.

- Add the onion, carrot, potato, and leek to the pot. Cover with a lid and let the vegetables sweat for about 10 minutes, stirring occasionally.
- Remove the lid and season with another sprinkle of mixed herbs and turmeric. Add the lentils, asparagus, chicory, thyme, stock cubes, and 1 litre of boiled water.
- Cover the pot again and let everything simmer for 30 minutes, stirring from time to time.
- Turn off the heat, remove the lid, and blend the soup until smooth and creamy.
- For an extra flavour boost, drizzle with a little olive oil or sprinkle with pumpkin seeds just before serving. Serve with a side of wholewheat bread and enjoy!
